INGREDIENTS

  • 1 lb fresh chow mein noodles
  • 2 cups thinly sliced cabbage
  • 1 cup sliced celery
  • 1 small sliced onion
  • 2 tbsp vegetable oil
  • 2 tbsp regular soy sauce
  • 1/2 tbsp dark soy sauce
  • 2 tbsp oyster sauce or vegetarian stir-fry sauce
  • 1 tbsp sesame oil
  • 2 minced garlic cloves
  • 1/4 cup low-sodium chicken stock or cold water
  • 1/2 tbsp cornstarch or potato starch

INSTRUCTIONS

  1. 1 In a small bowl, mix together the sauces and set aside.
  2. 2 Boil water in a large pan and blanch the chow mein noodles for 20-30 seconds until loosened.
  3. 3 Drain the noodles in a colander without rinsing to retain their flavor.
  4. 4 Heat vegetable oil in a large pan and sauté onions, cabbage, and celery for about one minute until softened.
  5. 5 Push veggies aside, add remaining oil, noodles, and prepared sauce to the pan.
  6. 6 Toss everything together until well-coated; remove from heat and serve.
